Lemon Nut Bread(Quick Bread)

- 4 Tbsp. butter
- 1 1/4 c. sugar
- 2 eggs
- 1 1/2 tsp. finely grated lemon rind
- 3 1/4 c. sifted flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 2/3 c. milk
- 4 Tbsp. lemon juice
- 3/4 c. chopped nuts
Directions

1Cream butter and sugar in mixing bowl.

2Blend in eggs one at a time and lemon rind.

3Stir in sifted ingredients alternately with liquids.

4Spoon batter in lightly greased loaf pan.

5Be sure batter is in all corners of pan.

6Bake in 350° oven for 1 hour or until knife inserted in center comes out clean.

7Remove from pan.

8Cool.
