  • 4 Tbsp. butter
  • 1 1/4 c. sugar
  • 2 eggs
  • 1 1/2 tsp. finely grated lemon rind
  • 3 1/4 c. sifted flour
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 2/3 c. milk
  • 4 Tbsp. lemon juice
  • 3/4 c. chopped nuts

    Cream butter and sugar in mixing bowl.

    Blend in eggs one at a time and lemon rind.

    Stir in sifted ingredients alternately with liquids.

    Spoon batter in lightly greased loaf pan.

    Be sure batter is in all corners of pan.

    Bake in 350° oven for 1 hour or until knife inserted in center comes out clean.

    Remove from pan.
