- 1 c. butter or margarine
- 1 c. sugar
- 1 egg
- 1 tsp. vanilla
- 1/4 tsp. lemon extract
- 1 2/3 c. sifted all-purpose flour
- 1/4 tsp. salt
- 1 c. Quaker oats (quick or old-fashioned; uncooked)
Directions

1Beat together butter and sugar until creamy.

2Add egg, vanilla and lemon extract; beat well.

3Sift together flour and salt.

4Add to creamed mixture.

5Blend well.

6Beat in oats.

7Using 1 teaspoon measure, drop onto ungreased cookie sheets.

8Bake in preheated moderate oven (375°) for 7 to 10 minutes or until edges are lightly browned.

9Remove from cookie sheets while hot.

10Cool thoroughly before stacking.

11Makes 6 dozen.
