  • 1 c. butter or margarine
  • 1 c. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1/4 tsp. lemon extract
  • 1 2/3 c. sifted all-purpose flour
  • 1/4 tsp. salt
  • 1 c. Quaker oats (quick or old-fashioned; uncooked)

Directions

    Beat together butter and sugar until creamy.

    Add egg, vanilla and lemon extract; beat well.

    Sift together flour and salt.

    Add to creamed mixture.

    Blend well.

    Beat in oats.

    Using 1 teaspoon measure, drop onto ungreased cookie sheets.

    Bake in preheated moderate oven (375°) for 7 to 10 minutes or until edges are lightly browned.
