Lemon Pasta Salad

Ingredients
- 1 large lemon
- 1/4 c. olive oil
- 1 c. slivered almonds
- 3 c. sliced leeks
- 3 Tbsp. capers, drained
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 red bell pepper
- 1 yellow bell pepper
- 8 oz. (3.5 c.) bow tie macaroni
Directions

1Cut bell peppers into strips and saute in lightly oiled skillet.

2Remove and add almonds, stirring over high heat 30 seconds.

3Remove peel from lemon using grater and set aside.

4Cut off white pith; discard.

5Cut lemon into 1/4-inch slices.

6Into hot oiled skillet, add leeks, lemon peel, lemon slices, capers, salt and pepper.

7Stir and toss until vegetables are tender-crisp. Remove from heat and discard lemon slices.

8Stir in almond and bell pepper slices.

9Cover and refrigerate.

10Cook pasta; drain and rinse in cold water.

11Combine with veggies.
