  • 3/4 c. butter or margarine
  • 1 1/2 c. sugar
  • 3 eggs
  • 2 1/4 c. all-purpose flour
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 3/4 c. buttermilk
  • 3/4 c. chopped pecans
  • 1 tsp. grated lemon rind

Directions

    Cream butter; gradually add sugar, beating well. Add eggs, one at a time, beating well after each addition. Combine flour, baking soda and salt; add to creamed mixture alternately with buttermilk, beginning and ending with flour mixture. Stir in pecans and lemon rind. Pour batter into a greased and floured 9 x 5 x 3-inch loaf pan. Bake at 350° for 1 hour and 15 to 20 minutes or until

    wooden pick inserted in center comes out clean. Cool in pan 10 minutes. Remove loaf pan and cool completely.
