- 2 Chicken breasts - bone in
- 1/4 cup Lemon Pepper seasoning
- 1/2 cup plain Flour
- 1/4 cup of cooking oil
Directions

1Preheat oven to 220 fan bake

2Wash chicken in water and free of excess fat, set aside on a plate and leave wet (do not dry chicken)

3Mix the 1/4 cup of lemon pepper seasoning with the 1/2 cup of flour in medium sized freezer bag or similar

4Place one piece of chicken in bag at a time and shake vigorously ensuring full coverage of chicken.

5Repeat for 2nd piece

6Pour oil onto an oven dish and place in centre of the oven.

7Add chicken to oven dish

8Cooking time varies depending on oven, mine usually takes around 40mins.

9Turn chicken breasts over at least once for each side.

10You can tell if the chicken is cooked by poking a knife in the chicken - the juice will run clear

11Garnish with sides of your choice.

12e.g: vegetables, salad or pasta.

13This chicken is meant to resemble fried chicken, therefore giving it a crunchy skin
