Lemon Pepper Chicken

  • 2 Chicken breasts - bone in
  • 1/4 cup Lemon Pepper seasoning
  • 1/2 cup plain Flour
  • 1/4 cup of cooking oil

    Preheat oven to 220 fan bake

    Wash chicken in water and free of excess fat, set aside on a plate and leave wet (do not dry chicken)

    Mix the 1/4 cup of lemon pepper seasoning with the 1/2 cup of flour in medium sized freezer bag or similar

    Place one piece of chicken in bag at a time and shake vigorously ensuring full coverage of chicken.

    Repeat for 2nd piece

    Pour oil onto an oven dish and place in centre of the oven.

    Add chicken to oven dish

    Cooking time varies depending on oven, mine usually takes around 40mins.

    Turn chicken breasts over at least once for each side.

    You can tell if the chicken is cooked by poking a knife in the chicken - the juice will run clear

    Garnish with sides of your choice.

    This chicken is meant to resemble fried chicken, therefore giving it a crunchy skin
