- 3 Tbsp. flour
- 1 c. sugar
- 3 Tbsp. cornstarch
- 1/2 c. cold water
- 1 c. water (boiling)
- 3 egg yolks
- 2 Tbsp. butter
- 1/4 c. lemon juice or grated rind of 1 lemon
- dash of salt
Directions

1Mix sugar, cornstarch and flour in top of double boiler.

2Add cold water slowly and stir until blended.

3Add boiling water, stirring constantly.

4Continue stirring and cook until thick and clear.

5Stir in beaten egg yolks and butter; cook until eggs thicken.

6Remove from heat.

7Add lemon juice, rind and salt.

8Stir and let cool.

9Put in baked shell.
