- 1 1/4 c. sugar
- 6 Tbsp. cornstarch
- 2 c. water
- 3 eggs, separated
- 1/3 c. lemon juice
- 1 1/2 tsp. lemon extract
- 3 Tbsp. butter
- 2 Tbsp. vinegar
Directions

1Mix sugar and cornstarch together in top of double boiler; add water.

2Combine egg yolks with lemon juice and beat.

3Add to rest of mixture.

4Cook until thick over boiling water for 25 minutes. (This takes care of starchy taste.) Add lemon extract, butter and vinegar.

5Stir thoroughly.

6Pour into 9-inch baked pie shell. Cover with meringue and brown.
