- 1 1/2 c. boiling water
- 3 Tbsp. cornstarch
- 3 Tbsp. flour
- speck of salt
- 1 c. sugar
- 1 lemon, grated rind and juice (or just lemon juice to taste)
- 2 egg yolks
Directions

1Mix flour, cornstarch, sugar and salt.

2Add boiling water, stirring constantly.

3Boil slowly 10 minutes.

4Stir in egg yolk and cook 2 minutes, stirring constantly.

5Remove from heat and add lemon juices and rind.

6Fill baked crust; cover with meringue. Bake at 325° for 15 minutes.

7Can use whipped cream instead of meringue.
