  • 1 1/2 c. boiling water
  • 3 Tbsp. cornstarch
  • 3 Tbsp. flour
  • speck of salt
  • 1 c. sugar
  • 1 lemon, grated rind and juice (or just lemon juice to taste)
  • 2 egg yolks

Directions

    Mix flour, cornstarch, sugar and salt.

    Add boiling water, stirring constantly.

    Boil slowly 10 minutes.

    Stir in egg yolk and cook 2 minutes, stirring constantly.

    Remove from heat and add lemon juices and rind.

    Fill baked crust; cover with meringue. Bake at 325° for 15 minutes.

    Can use whipped cream instead of meringue.
