- 1/4 c. flour
- 3/4 c. sugar
- 2/3 c. boiling water
- 3 eggs, 2 eggs separated
- 2/3 c. evaporated milk
- 1 tsp. grated lemon rind
- 1/3 c. lemon juice
- 9-inch pastry shell
Directions

1Mix dry ingredients.

2Add boiling water and cook 15 minutes in top of double boiler.

3Stir often.

4Add beaten egg yolks and milk. Cook until smooth and thick.

5Remove from heat; add lemon juice and rind.

6Cool.

7Pour into pastry shell.

8Top with meringue.
