  • 1 large lemon (grated rind and juice)
  • 1 c. sugar
  • 1/2 c. milk
  • 2 Tbsp. cornstarch
  • 2 Tbsp. margarine
  • 3 eggs
  • 6 Tbsp. sugar for meringue

Directions

    Mix together sugar and cornstarch.

    Add eggs, saving whites for meringue.

    Add margarine, lemon and milk.

    Pour into an unbaked pie shell and bake at 350°.

    When nearly done, top with egg whites which have been stiffly beaten with 6 tablespoons sugar added.

    You may also add 1/4 teaspoon cream of tartar to egg whites.
