- 1 c. sugar
- 4 Tbsp. cornstarch
- 2 Tbsp. flour
- 1 1/2 c. boiling water
- 1 tsp. lemon rind
- 3 egg yolks
- 4 Tbsp. lemon juice
- 2 Tbsp. butter
- 1 baked pie shell
Directions

1Mix sugar, cornstarch and flour.

2Add boiling water.

3Cook over low heat until thickened, stirring constantly.

4Add some hot mixture to beaten egg yolks, then add yolks to flour mixture.

5Add butter, lemon juice and rind until thick.

6Pour into baked pie shell.

7Cool.

8Use egg whites to make meringue.
