- 1 1/2 c. sugar
- 1 1/2 c. hot water
- 1/3 c. cornstarch
- 3 egg yolks
- 3 Tbsp. butter
- 4 Tbsp. lemon juice
- 1 1/3 tsp. lemon rind
Directions

1Bring sugar, water and cornstarch to a boil; cook 1 minute. Beat a little of hot mixture into egg yolks; add rest of pudding and boil 1 minute more.

2Add butter, lemon and lemon rind; mix and pour into a 9-inch baked pie shell.

3Top with meringue.
