- 2 c. sugar
- 3 Tbsp. cornstarch
- 1/4 tsp. salt
- 1 1/3 c. milk
- 1/4 c. lemon juice
- 2 egg yolks
- 1 Tbsp. butter
- 1 (9-inch) pie crust
Directions

1In a double boiler pan combine sugar, cornstarch and salt.

2Add milk and heat until mixture boils and thickens.

3In small bowl combine lemon juice and egg yolks.

4Add 1/3 cup of hot milk to eggs and lemon juice.

5Add to hot stove mixture and cook until thick custard.

6Add butter.

7Pour custard into baked 9-inch pie crust and top with 2 egg whites, beaten to peaks.

8Add 2 tablespoons sugar and put on pie custard and bake at 350° until meringue browns, about 10 to 20 minutes.
