  • 2 c. sugar
  • 3 Tbsp. cornstarch
  • 1/4 tsp. salt
  • 1 1/3 c. milk
  • 1/4 c. lemon juice
  • 2 egg yolks
  • 1 Tbsp. butter
  • 1 (9-inch) pie crust

Directions

    In a double boiler pan combine sugar, cornstarch and salt.

    Add milk and heat until mixture boils and thickens.

    In small bowl combine lemon juice and egg yolks.

    Add 1/3 cup of hot milk to eggs and lemon juice.

    Add to hot stove mixture and cook until thick custard.

    Add butter.

    Pour custard into baked 9-inch pie crust and top with 2 egg whites, beaten to peaks.

    Add 2 tablespoons sugar and put on pie custard and bake at 350° until meringue browns, about 10 to 20 minutes.
