- 1 1/2 c. sugar
- 4 Tbsp. cornstarch
- 4 Tbsp. flour
- 2 c. boiling water
- 4 egg yolks (3 large)
- 1/2 tsp. salt
- grated rind of 2 lemons
- 1/3 c. lemon juice
Directions

1Mix sugar, flour, cornstarch and salt together.

2Add boiling water, while stirring constantly, using high heat until mixture begins to thicken.

3Then cook slowly on low heat until thick.

4Add beaten egg yolks and cook 2 minutes longer on low heat.

5Add lemon juice and rind.

6Cool.

7Pour into a previously baked 9-inch pie shell.

8Cover with meringue.

9Bake at 350° for 15 minutes.
