  • 3 c. hot water
  • 3 c. white bread crumbs (soft), crust removed
  • 3 Tbsp. butter
  • 2 c. sugar
  • 1/4 c. cornstarch
  • 3 lemons, grated rind of 2 and juice from all 3
  • 3 eggs
  • 1/2 tsp. salt
  • 1 baked pie shell

    In a large bowl, put the water, bread crumbs and butter; let set until soft, then beat with mixer until smooth. Add this to the other ingredients in a large saucepan and cook until thickened, stirring constantly. Pour into the baked pie shell and top with meringue or whipped topping.
