- 1/2 stick butter
- 1 c. sugar
- 4 Tbsp. flour
- 2 c. milk
- 3 egg yolks
- rind of 1 lemon and juice
- 1 (9-inch) baked pastry shell
- 3 egg whites
- 1/4 tsp. cream of tartar
- 6 Tbsp. sugar
Directions

1Melt butter; add 1 cup sugar and flour, blending well. Gradually add milk.

2Heat over low heat until it begins to thicken.

3Beat egg yolks; add lemon juice and rind.

4Gradually add about 1 cup of hot milk mixture to eggs.

5Combine the 2 mixtures and cook until thick, stirring constantly.

6Pour into baked 9-inch pastry shell.
