- 3 c. pineapple juice
- 5 Tbsp. cornstarch or arrowroot
- 1/2 c. shredded coconut
- 1/3 tsp. salt
- 2 tsp. lemon juice
- 1 tsp. lemon extract
- 1/3 c. honey
- chopped pecans
Directions

1Combine all ingredients except lemon juice and extract in blender and whiz until liquid has a smooth consistency with most of coconut well blended.

2Pour into saucepan and heat until thickened.

3Cool slightly, then add lemon juice and extract and mix well.

4Pour into baked pie shell of your choice or you may pour into custard cups.

5Chill and serve.
