- 4 Tbsp. cornstarch
- 1 1/2 c. sugar
- 2 c. boiling water
- 2 Tbsp. butter
- 4 beaten egg yolks
- 1/4 tsp. salt
- 1/2 c. lemon juice
- grated rind of 1 lemon
Directions

1Mix together cornstarch, sugar and boiling water and stir well.

2Place over medium heat and boil until it thickens.

3Add butter, egg yolks, salt, lemon juice and grated rind of lemon. Cook three minutes, then pour into a baked shell.

4Cover with meringue and brown.
