- 1 1/2 c. sugar
- 1/3 c. plus 1 Tbsp. cornstarch
- 1 1/2 c. water
- 3 egg yolks, slightly beaten (reserve whites for meringue)
- 3 Tbsp. margarine
- 1/2 c. lemon juice
- 2 drops yellow food color (optional)
Directions

1Bake 9-inch pie shell at 400°.

2Mix sugar and cornstarch together; add water 1/2 cup at a time.

3Heat over medium heat, stirring constantly.

4Bring to boil (it will thicken) for 1 minute.

5Pour 1/2 hot mixture into egg yolks; stir well.

6Return mixture to saucepan and boil 1 minute longer.

7Remove from heat; add margarine, lemon juice and food color.

8Stir until blended. Pour into pie shell; let cool.
