  • 2 eggs, separated
  • juice of 2 lemons
  • 1 lemon rind, grated
  • 1 c. granulated sugar
  • 1 c. sweet milk
  • 4 Tbsp. melted butter
  • 3 Tbsp. flour

Directions

    Beat egg whites; set aside.

    Beat egg yolks and sugar together.

    Add milk, lemon juice and rind, flour and butter.

    Fold in egg whites.

    Pour into a 1-quart baking dish (greased).

    Set in shallow pan of water and bake at 350° until firm, approximately 30 minutes.

    Has a firm cake on top and soft pudding in bottom.
