Lemon Pudding

  • 2 eggs, separated
  • juice of 2 lemons
  • grated rind of 1 lemon
  • 1 c. granulated sugar
  • 1 c. sweet milk
  • 4 Tbsp. butter, melted
  • 3 Tbsp. flour

Directions

    Beat egg whites; set aside.

    Beat egg yolks and sugar together.

    Add milk, lemon juice, rind, flour and melted butter. Fold in beaten egg whites.

    Pour into 1-quart baking dish (greased).

    Set in shallow pan of water and bake at 350° until firm and golden brown (about 35 to 40 minutes).

    This dessert has a firm cake on top with a soft pudding underneath.

    Best when completely cool.
