- 1 c. sugar
- 1/2 c. flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 3 eggs, separated
- 1/2 c. sugar
- 2 tsp. grated lemon rind
- 1/4 c. lemon juice
- 2 Tbsp. melted butter
- 1 1/2 c. milk
Directions

1Sift first four ingredients together in mixing bowl.

2Beat egg whites until stiff.

3Add the sugar one spoonful at a time until blended.

4Set aside.

5Beat egg yolks until light.

6Add lemon juice, rind, melted butter and milk.

7Stir egg yolks and juice mixture into flour mixture.

8Beat until smooth.

9Fold in the egg whites.

10Pour into a buttered 2-quart baking dish.

11Set in a pan of hot water 1/2-inch deep.

12Bake 45 minutes at 350°.

13Chill before serving.
