- 2 12 cups flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1 12 cups sugar
- 12 cup hydrogenated shortening
- 1 cup milk (divided)
- 4 egg whites
- 1 (3 1/2 ounce) package lemon pudding mix
- 1 12 teaspoons lemon extract
Directions

1Preheat oven to 350 degrees F. Grease a bundt pan and set aside.

2Mix together flour, baking powder,salt, and sugar, until well blended.

3Add 2/3 cups milk and shortening and mix for about 2-3 minutes in electric mixer.

4Add remaining milk, eggs, pudding mix, and lemon extract.

5Mix well.

6Be sure to scrape the bowl sides and bottom several times to ensure thorough mixing.

7Pour into WELL GREASED bundt pan and cook for 35-45 minutes.

8Toothpick inserted one inch from center should come out clean.

9Cool about 10 minutes before removing from pan.

10If desired, add icing when completely cooled.
