Lemon Raspberry Jumbo Muffins

Ingredients

  • 2 c. all purpose flour
  • 1 c. sugar
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs
  • 1 c. half and half cream
  • 1/2 c. vegetable oil
  • 1 tsp. lemon extract
  • 1 c. fresh/frozen unsweetened raspberries

Directions

    In a large bowl, combine flour, sugar, baking powder and salt.

    In another bowl, combine eggs, cream, oil and extract. Stir into dry ingredients just until moistened.

    Fold in raspberries.

    Fill greased muffin cups 2/3 full.

    Bake at 400° for 22 to 25 minutes or until toothpick comes out clean.

    Cool 5 minutes then remove to cooling rack.
