- 2 c. all purpose flour
- 1 c. sugar
- 3 tsp. baking powder
- 1/2 tsp. salt
- 2 eggs
- 1 c. half and half cream
- 1/2 c. vegetable oil
- 1 tsp. lemon extract
- 1 c. fresh/frozen unsweetened raspberries
Directions

1In a large bowl, combine flour, sugar, baking powder and salt.

2In another bowl, combine eggs, cream, oil and extract. Stir into dry ingredients just until moistened.

3Fold in raspberries.

4Fill greased muffin cups 2/3 full.

5Bake at 400° for 22 to 25 minutes or until toothpick comes out clean.

6Cool 5 minutes then remove to cooling rack.
