- 1 1/2 lbs medium red potatoes
- 1/4 cup water
- 2 tablespoons butter, melted
- 1 tablespoon lemon juice
- 3 tablespoons fresh chives, snipped
- chopped fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Directions

1cut a strip of peel from the middle of each potato.
