Lemon Rice

  • 2 cups Jasmine Rice
  • 3 cups Water
  • 1 whole Lemon, Divided
  • 1 cup Sweet Corn
  • 1 cup Peas (I Use Frozen)

Directions

    In a medium sauce pan, add rice and water. Slice lemon in half and add the juice of half the lemon to the pan. Bring to boil over medium high heat, reduce heat and simmer 20 minutes or until rice is fluffy.

    Remove from heat. Add the zest and juice of the remaining half of lemon into rice. Add corn and frozen peas, stir to combine. Serve warm or cold.
