- 3 c. milk
- 1/2 c. rice
- 2 eggs, separated
- 1 c. sugar
- 1/2 tsp. salt
- 1/4 c. lemon juice
- 2 tsp. grated lemon rind
- 1/8 tsp. cream of tartar
Directions

1Cook rice in milk.

2Beat egg yolks and add 3/4 cup sugar, the salt, lemon juice and rind; combine with cooked rice.

3Beat egg whites; add cream of tartar and 1/4 cup sugar.

4Pile on top of rice and bake for 20 to 25 minutes in moderate oven.
