- 5 red potatoes, quartered
- 4 tablespoons olive oil
- 1/4 cup chopped fresh parsley
- 1 lemon, juice and zest of
- 1 1/4 teaspoons salt
- 1 teaspoon crushed dried rosemary
- 1 teaspoon crushed dried thyme
- 1/2 teaspoon sugar
- 1/2 teaspoon pepper
Directions

1Preheat oven to 400 degrees F.

2Toss potatoes in a large bowl with half the olive oil. Place on a baking sheet; roast for 45 minutes, turning occasionally until browned and tender.

3Combine parsley, lemon juice and zest, salt, rosemary, thyme, sugar, pepper and remaining olive oil. Pour over potatoes and toss to evenly coat. Serve immediately.
