  • 1 1/2 c. sugar
  • 2 Tbsp. flour
  • 3 eggs
  • 3/4 stick butter (3 oz.), melted
  • juice of 3 lemons
  • grated rind of 1 lemon

Directions

    Combine all ingredients and pour into an unbaked pie shell. Bake at 350° for 30 to 40 minutes (knife comes out clean when inserted close to center of pie). Very tart. Great after a fried fish dinner.
