- 1/2 c. sugar
- 1 Tbsp. cornstarch
- 2 Tbsp. lemon juice
- 1 egg, separated
- pinch of salt
- 2 Tbsp. butter
- 1 c. boiling water
Directions

1Mix the sugar and cornstarch.

2Add boiling water and salt; boil until thick and clear, stirring constantly.

3Beat in the butter and lemon juice.

4After separating the egg, beat yolk with a fork.

5Add some of the hot mixture.

6Add the yolk to the hot mixture and cook for 5 minutes.

7Beat the egg white until soft peaks form, then slowly fold into the hot sauce.

8Serve warm over plain cake or cupcakes.
