- 6 boneless chicken breasts
- salt and pepper
- 1/2 c. butter
- 2 Tbsp. dry sherry
- 2 Tbsp. lemon juice
- 2 tsp. grated lemon peel
- freshly grated Parmesan cheese
Directions

1Season chicken, then flatten using meat mallet or rolling pin. Melt butter in heavy large skillet over medium heat.

2Add chicken. Cook until brown, about 5 minutes. Add sherry and lemon juice. Bring to a boil.

3Turn.

4Add lemon peel.

5Place on plate.

6Pour juice over chicken, then top with Parmesan cheese.
