- 1/2 c. butter, softened (no substitutes)
- 2/3 c. sugar
- 1 egg
- 1/4 c. lemon juice
- 1 Tbsp. grated lemon peel
- 1 3/4 c. flour
- 1/4 tsp. baking soda
- 1/4 tsp. cream of tartar
- 1/4 tsp. salt
- 1/2 c. finely chopped almonds
Directions

1In a mixing bowl, cream butter, sugar and egg until well blended.

2Add lemon juice and peel.

3Combine flour, baking soda, cream of tartar and salt; stir into creamed mixture.

4Add almonds. Cover and refrigerate the dough for at least 1 hour or overnight. Roll into 1-inch balls.

5Place on ungreased baking sheets.

6Bake at 350° for 10 to 12 minutes or until bottoms are lightly browned (cookies will not brown on top).

7Remove immediately to wire rack; cool for 5 minutes, then roll in confectioners sugar.

8Yields about 3 dozen.
