Lemon Spinach Salad

  • 1 (3 oz.) box lemon jello
  • 1/2 c. mayonnaise
  • 1 pkg. frozen spinach
  • 1/2 c. chopped celery
  • 1/2 c. water
  • 1 1/2 tsp. vinegar
  • 3/4 c. cottage cheese
  • 2 Tbsp. chopped onion

Directions

    Mix jello, water, mayonnaise and vinegar together and heat until dissolved.

    Refrigerate for 1/2 hour.

    Drain frozen spinach and squeeze out moisture.

    Add spinach, cottage cheese, celery and onion to jello mixture and refrigerate overnight.
