- 1 Tbsp. butter
- juice and rind of 1 lemon
- 2 egg yolks
- 2 Tbsp. flour
- 1 c. milk
- 2 egg whites
- 9-inch unbaked pie crust
Directions

1Cream sugar and butter.

2Beat egg yolk and add lemon.

3Add to creamed mixture.

4Add flour and milk.

5Beat egg whites until stiff but not dry.

6Fold whites into rest of ingredients.

7Put into crust.

8Bake at 450° for 10 minutes, then at 350° for 30 or more minutes.
