- 175 g butter or 175 g margarine
- 175 g caster sugar
- 3 eggs, beaten
- 175 g self raising flour
- 1 and a half lemon (juice)
- 1 grated lemon (zest)
- 1 teaspoon vanilla extract (optional)
Directions

1Cream butter/margarine and sugar together.

2Add in beaten eggs and whisk well.

3Add lemon juice, zest and vanilla extract. Mix till well combined.

4Add in sifted flour and fold in the flour into the mixture till well combined.

5Pour mixture into cupcake cups or cake molds. Whatever that is available for you.

6Bake at 180°C for 10 minutes or until the skewer/toothpick comes out clean.

7Let it cool for at least 10 minutes Serve.
