- 1 unbaked 9-inch pie shell
- 1/4 c. butter, creamed
- 1 c. sugar
- juice and grated rind of 1 lemon
- 1/8 tsp. salt
- 3 Tbsp. flour or cornstarch
- 2 egg yolks, well beaten
- 1 c. milk
- 2 egg whites, beaten stiff
Directions

1Mix thoroughly butter, sugar, lemon juice and rind, salt, flour or cornstarch, egg yolks and milk.

2Beat egg whites stiff and fold in.

3Pour into pie shell.

4Bake at 375° for 45 to 50 minutes.
