  • 2 Tbsp. flour
  • 3 eggs, separated
  • 1 1/2 c. milk
  • juice and rind of 1 lemon
  • 2 Tbsp. butter, melted
  • 1/2 tsp. salt

    Cream butter and sugar.

    Add egg yolks; beat well.

    Add melted butter and lemon juice and rind.

    Fold in stiffly beaten egg whites.

    Pour into an unbaked pie shell.
