  • 4 eggs, separated
  • 1 c. milk
  • 1/3 c. lemon juice
  • 1 c. sugar
  • 2 Tbsp. flour
  • 1 tsp. lemon rind
  • 1/4 tsp. salt

    Cream butter and sugar.

    Add each egg yolk, separately mixing after each addition.

    Add flour, milk, lemon juice and rind.

    Beat egg whites with salt and fold in.

    Pour into uncooked pie shell. Bake at 425° for 30 minutes.
