- 2 Tbsp. butter
- 4 eggs, separated
- 1 c. milk
- 1/3 c. lemon juice
- 1 c. sugar
- 2 Tbsp. flour
- 1 tsp. lemon rind
- 1/4 tsp. salt
Directions

1Cream butter and sugar.

2Add each egg yolk, separately mixing after each addition.

3Add flour, milk, lemon juice and rind.

4Beat egg whites with salt and fold in.

5Pour into uncooked pie shell. Bake at 425° for 30 minutes.
