- 1 c. sugar
- 1/4 c. flour
- 1/4 c. butter or margarine
- 1/8 tsp. salt
- 3 eggs, separated
- 1 c. milk
- juice and grated rind of 2 lemons
Directions

1Combine sugar and flour until blended with fork (no lumps). Add melted butter, salt and egg yolks; beat with mixer until smooth.

2Add lemon juice and rind.

3Add milk slowly.

4Beat egg whites until stiff.

5Fold in with whisk until blended.

6Pour into unbaked pie shell.

7Bake for 40 minutes until brown at 350°. Check at 30 to 35 minutes.
