  • 2-1/2 tbsp. butter, softened
  • 1-1/4 cup milk
  • 1-1/4 cup sugar
  • 1 lemon peel, grated
  • 4 eggs, separated (beat egg whites)
  • 1/3 cup lemon juice (fresh)
  • 2-1/2 tbsp. flour
  • 1 pie crust, unbaked

Directions

    Cream butter and sugar until fluffy.

    Add egg yolks, flour, milk, lemon peel and lemon juice and mix together.

    Beat egg whites until stiff (but not dry).

    Carefully fold egg whites into mixture.

    Pour into unbaked pie shell.

    Bake for 15 minutes at 375F/190C.

    Lower oven to 300F/150C and bake for additional 45 minutes.
