- 1 c. sugar
- 1/4 c. butter or margarine, melted
- 2 lemons (juice and grated peel; 1/4 c.)
- 1/4 c. flour
- 1/8 tsp. salt
- 2 eggs, separated
- 1 c. milk
- 1 (9-inch) unbaked pie shell
Directions

1Combine sugar, flour, melted butter, salt and egg yolks.

2Beat until smooth.

3Beat in lemon juice and peel.

4Add milk, beating slowly.

5Beat egg whites until stiff.

6Fold in.

7Bake pie shell in a 350° oven for 5 minutes.

8Pour in filling.

9Bake 40 minutes at 350° or until filling is firm.
