  • 2 eggs
  • 2 Tbsp. soft butter
  • 1 c. sugar
  • 2 Tbsp. flour
  • 1 lemon rind
  • juice of 1 lemon
  • 1 c. milk
  • 2 egg whites

Directions

    Cream the eggs together with the soft butter and 1 cup sugar. Add the flour, lemon rind, lemon juice and milk.

    Beat the egg whites together until stiff; fold in last.

    Pour into unbaked pie crust.

    Bake for 10 minutes at 400°, then for 25 minutes at 350°.
