- 2 eggs
- 2 Tbsp. soft butter
- 1 c. sugar
- 2 Tbsp. flour
- 1 lemon rind
- juice of 1 lemon
- 1 c. milk
- 2 egg whites
Directions

1Cream the eggs together with the soft butter and 1 cup sugar. Add the flour, lemon rind, lemon juice and milk.

2Beat the egg whites together until stiff; fold in last.

3Pour into unbaked pie crust.

4Bake for 10 minutes at 400°, then for 25 minutes at 350°.
