- 1 Tbsp. butter
- 2 Tbsp. flour
- 1 c. sugar
- 1 c. milk
- 2 eggs, separated
- 1 1/2 lemons (rind and juice)
- unbaked 9-inch pie shell
Directions

1Cream together the butter, flour and sugar.

2Add egg yolks; mix well.

3Add lemon rind and juice.

4Stir in milk.

5Beat egg whites until stiff; fold into mixture.

6Pour into pie shell.

7Bake for about 25 minutes at 375°.

8Pie should be lightly browned and set.

9When pie is cut, you have a creamy filling on the bottom and it is cakelike on top.
