Lemon Sponge Pudding

Ingredients
- 1 1/2 c. milk
- 3/4 c. sugar
- 3 eggs
- 1/2 lemon rind, grated
- 3 Tbsp. flour
- 3/4 tsp. salt
- 3 Tbsp. lemon juice
Directions

1Scald milk in double boiler.

2Mix dry ingredients and add to beaten egg yolks.

3Gradually add the scalded milk, stirring constantly.

4When cool, gradually add lemon juice and rind, mixing thoroughly.

5Now fold in stiffly beaten egg whites.

6Bake in a pan of hot water in a slow oven at 325° for 45 minutes.

7Chill before serving.

8If pudding has not browned on top within 45 minutes, turn on broiler for a minute or two to have it a beautiful golden brown.

9Serve with a lemon sauce.
