- 1 Tbsp. flour
- 1 Tbsp. cornmeal
- 1 lemon rind, grated
- 3 eggs, slightly beaten
- 3 Tbsp. margarine, melted
- 3 Tbsp. milk
- 1 1/2 c. sugar
- whipped topping
Directions

1Whisk together flour, cornmeal, sugar and eggs.

2In another bowl, mix margarine, milk, lemon juice and lemon rind.

3Add lemon mixture to flour mixture.

4Pour into 9-inch crust or 8 pastry shells.

5Bake at 375° for 35 to 40 minutes.

6Top with dollop of whipped topping.
