- 1/4 c. gingersnap crumbs
- 2 1/4 c. flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. sugar
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. ginger
- 1/2 c. melted margarine
- 2/3 c. milk
- 2 eggs, slightly beaten
- 2 tsp. lemon peel
Directions

1Grease microwave ring mold and coat with crumbs.

2Mix all dry ingredients; make well in center.

3Add rest of ingredients after mixing them together.

4Spoon into mold and microwave on Medium 8 minutes.

5Rotate after 4 minutes and bake 1 1/2 minutes longer or until cake pulls away from sides of mold.

6Let stand 10 minutes; invert onto plate.

7Glaze with lemon juice and powdered sugar mixture.
