- 1/2 c. shortening
- 1 c. sugar
- 2 large eggs
- 1 1/2 c. all-purpose flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. milk
- grated rind of 1 lemon
- 3/4 c. chopped nuts
- Lemon Glaze
Directions

1Beat shortening at medium speed until fluffy; gradually add sugar, beating well.

2Add eggs one at a time, beating after each one.

3Combine flour, baking powder and salt.

4Add to creamed mixture, alternating with milk, beginning and ending with flour. Stir in lemon rind and pecans.

5Pour batter into greased and floured loaf pan.

6Bake at 350° for 50 to 55 minutes.

7Cool completely.

8Pour Lemon Glaze over bread.
