Lemon Thyme Summer Squash

  • 5 garlic cloves, minced
  • 10 summer squash, cut in chunks
  • 3 tablespoons olive oil
  • 1 tablespoon lemon peel, minced
  • 1 tablespoon fresh thyme, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Directions

    Heat olive oil in large skillet on medium heat.

    Add garlic and saute for 2 minutes until just turning golden.
  3. 3
    Add squash, lemon and thyme ,reduce heat to medium low, cover and cook for 30 minutes, stirring occasionally.

    Remove cover, increase heat to medium high and cook for 10 minutes, allowing accumulated fluid form the squash to reduce.

    Season with salt and pepper.

    Serve.
