Lemon Tray Cake

  • 4 eggs
  • 1 3/8 cups sugar
  • 2 lemons zest small
  • 1 cup milk
  • 3/4 cup olive oil
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1/2 cup milk warm
  • powdered sugar for garnish

    Preheat oven to 180 degrees Celsius.

    Grease a baking tray with margarine and sprinkle with flour. Set aside.

    In a bowl, whisk the egg yolks with 175 grams of sugar, and the lemon zest.

    Add 250 millileters of milk and oil. Whisk again.

    Add the flour and baking powder, and mix. Set aside.

    In another bowl, whisk the egg whites and the remaining 100 grams of sugar, until stiff.

    Add spoonfuls of the whites to the dough, and gently mix in from top to bottom.

    When everything is well mixed, place the dough on the tray, and bake for 35 to 40 minutes.

    Remove from oven.

    While the cake is still warm and in the tray, prick with a toothpick, or skewer stick, and sprinkle with 1/2 cup of warm milk.

    Allow it to cool.

    Cut the cake into squares, and sprinkle with powdered sugar.
