- 1 can evaporated milk
- 1 c. sugar
- juice of 2 lemons
- small amount grated lemon rind
- 12 vanilla wafers, crushed
Directions

1Thoroughly chill milk.

2Remove from can.

3Add sugar; whip with electric mixer.

4Add lemon juice, a small amount at a time, while whipping.

5Add lemon rind just before mixture will hold shape. Line 2 ice trays (without sections) with waxed paper.

6Cover each with 1/4 of the crumbs.

7Pour 1/2 of the mixture into each tray. Cover with remaining crumbs.

8Freeze until firm.

9Serves 8.
